I tried to bake spinach kofta today...and failed. But here's what I did.
1/2 onion 1 tsp ginger 2 cloves of garlic 2/3 block tofu 2 small potatoes 1/2 bunch spinach
Boiled the potato until I can mash them up. Blanched the spinach and chopped them up. (I sorely need a food processor.) Sauteed onions, garlic, and ginger. Mixed everything together, added 3 tsp of five spice powder (I should be using garam masala) and 2 tsp of salt. Rolled into balls and baked until golden. Should serve with cucumber and yogurt, but I didn't have plain yogurt.
Here's what went wrong: -Should have added the flour the recipe called for -Should have chopped them up better, but didn't have a food processor -Should have added more grease to the cooking tray, because they stuck.
The koftas shrunk to 1/2 of their original size, so they weren't very filling. I liked them because they were healthy, but other people didn't think they tasted very good. Sigh... |
