Had another go at baking sourdough. It went pretty well. The first time I tried it, I ended up with a loaf that was tasty, but very dense, and not particularly sour. My best guess was that I hadn't let the sponge proof long enough. This time off I mixed it up some. I still followed the same basic recipe, but with some variation.
