Natural Baking Cookbooks

I was blown away last week when I got a Blueberry Blondie from the health food store and it made with whole food ingredients. It was amazingly DELICIOUS! I love to bake but have always been intimidated by cooking with natural sweetners and alternate flours because I wasn't sure of the ratios. This is where I could use your help. Can anyone recommend a really delicious natural baking cookbook? ...

Artificial sweeteners/diet pills - kill brain cells and are carcinogenic?

I'm curious, I've been told artificial sweeteners kill braincells and may cause cancer. I then wondered about diet pills - you'd assume they'd be somewhat bad for you. If you think about it, diet pills help burn fat, but isn't your brain fatty tissues?? I may be wrong, I would love to get your answers! edit due to unintentional offending.
