... is bass. :-) But they had some post-filleting salmon backbones for very cheap, with a fair amount of meat ...now have probably 1 1/2-2 cups of boneless salmon trimmings. My main ideas are: Croquettes (I've never made them, but they sound fascinating) or Fish cakes (salmon, potato, dill, egg, milk, salt, and pepper, then fry) Does anyone have either a good recipe for croquettes or any other ideas?
