Light Lunch Fare....

Despite that it's only 2:20 in the afternoon and ALREADY 94 degrees (so much for Spring !)....I STILL crave soup. But gone are the cream based soups that are a "meal in a bowl" type dishes....I love clear, clean broths....egg drop soups....and cold, vegetable puree'd soups. (Save gazpacho). Today I made Udon Soup for lunch....beef broth, udon noodles, gourmet mushrooms, onions, shaved ...
