My dad loves his tung hoon. Which is essentially vermicelli made out of mung beans. I have been trying to get him to eat more vegetables and mushrooms seeing he has to watch his diet now after his bypass. To get him to eat his veggies, I decided to incorporate it into a tung hoon dish. That would force him to eat all his greens, he can’t possibly pick everything out…hahahahaha...

It takes time to dig out the yummy flesh...and so interesting to see how everyone tucks in differently. When I threw my back a couple of weeks back, I was feeling quite sorry for myself. I had the day planned out…and I was really looking forward to it!
